Szymly20FO is derived from egg-white with total protein 3.4% - 3.5%. Lysozyme is 129 amino acid residues enzyme (EC 188.8.131.52), which occurs naturally in plant and animal tissues and in secretions such as tears, saliva and mucus. Egg-white lysozyme is a stable protein and a typical representative of the lysozyme class. It functions by catalyzing the hydrolysis of 1,4-β-linkages between N-acetylmuramic acid and N-acetyl-D-glucosamine residues in peptidoglycans and between N-acetyl-D-glucosamine residues in chitodextrins.
